Hayley’s 3 Cheese Grilled Cheese Sandwich

Ingredients
·         1 tablespoon blueberry jam
·         2 slices sourdough bread
·         1 tablespoon blue cheese
·         ¼ cup shredded sharp cheddar cheese
·         ¼ cup shredded pepper jack cheese
·         ¼- ½  apple, cored and cut into thin slices. I prefer about ½ cm or ¼ in if I can manage it.
·         1-2 tablespoon olive oil
·         2 tablespoons butter to grill

Directions
1.      Preheat the oven to 400 degrees Fahrenheit. Line a baking tray with tine foil or silicon sheet. Place the bread slices on the tin foil or silicon sheet.

2.      Place the sharp cheddar cheese on one slice of bread. Place pepper jack cheese on the other slice of bread. Sprinkle the blue cheese evenly between the two slices. Place each half into the oven for 5 minutes.
3.      In a large pan, heat up the olive oil on medium heat until it is shiny but not smoky. It should move around the pan with ease. Place the thin apple slices in the pan and grill for about 2-3 minutes on each side. Remove from heat.

4.      Remove the bread from the oven, add the blueberry jam spread out evenly on one slice, add the grilled apple slices spread out on top of the jam, and place the halves together. In the same pan you grilled the apples, add ½ to 1 tablespoon of butter and wait until it is melted and some little bubbles are beginning to form. Add the sandwich and grill it on medium heat until nicely browned, about 3-5 minutes. Repeat on the opposite side adding more butter underneath the bread when it is flipped. Let the sandwich cool for about 30 seconds and enjoy.

Just Another Macaron Monday: Halloween Part 2

It’s still a few months away, but Halloween will be here before you know it! In honor of fall and Halloween, there is one thing most people agree on: we need more pumpkin spice in our lives. Companies jump at the opportunity to flavor their products during this time of year, and some of them work really well (others I question). However, I’m a stickler for flavor, and artificial flavors usually don’t do it for me because they either don’t taste like the product or have too much sugar added, which cancels out the naturally beautiful flavor it is trying to replicate. Recently, I was gifted a baking book, and I was overjoyed to find several recipes for different flavors of French macarons. It inspired me to try some of my own flavor combinations, so I've been baking batch after batch and trying loads of new things. Spooky Creations: Halloween Part 4

Welcome back everyone! This post is a continuation of my Halloween celebration this year. In this post I use my sugar cookies recipe as well as some non-Halloween themed cookie cutters to make spooky or Halloween themed cookies. It only takes a little imagination and *poof* you've got some new creations in your kitchen. Every Halloween season I see cookie cutters emerge and the same ones make their way through each year with a variation or two.
