Hayley's Citrus Drizzle Cake

Hayley’s Citrus Drizzle Cake I love citrus cake, but when I first made one from a recipe I found online I found it didn't have nearly enough lemon flavor because most of it had been baked out. I added more citrus and then tinkered with the other ingredients to balance out the consistency a bit.  This recipe is full of flavor, but not overly lemony (I know you don't want it to be too tart, but you still want to taste the lemon, yes?). Also, this recipe guarantees a fluffy cake mix that is very airy and has a nice soft texture after it is baked. The cake can be made with the citrus fruit of your choice. Coming Soon: I'm going to MIX IT UP! Get familiar with this recipe because my upcoming cook book will include two ways to Mix It Up. Want a hint? A royal wedding inspired mix, a fall inspired mix, and a winter inspired mix. XXX Ingredients (Citrus Cake) 115 grams of butter (1 stick will work fine) + more for greasing the pan 130 grams superfine granulated w...

Sweet Clotted Cream & Simple Syrup

Nothing says TEATIME like scones and cream. This is just something to jazz up the clotted cream we have come to know and love. (This also works well with double cream too!) Now, if you live in the US clotted cream and double cream will probably be harder to get your hands on. I find them both at Whole Foods or a British Specialty store. Places like Wal-Mart are making them easier to find because they are offering lots of stuff online (not in stores) that can be shipped within a few days. The only downside is needing to wait to get your products. P.S. There is no true US equivalent. Our heavy whipping cream has the highest amount of cream, but double cream still has a higher content and is thicker. British foods, especially their desserts, often use double cream as an ingredient, so if you like to indulge it is worth finding out where you can get these little goodies. Hayley’s Coconut Crusted French Toast with Maple Butter

Hayley’s Coconut Crusted French Toast with Maple Butter Makes 4-5 slices of French toast depending on the size of bread you use. I've used whole wheat bread for mine. Batter ·          3 eggs ·          ¼ milk ·          ¼ dried shredded unsweetened coconut Maple Butter ·          2 sticks of unsalted butter (softened) ·          1/8 cup milk (room temperature) ·          1/8 maple syrup (more for French toast if desired) Other ·          Butter (for the frying pan) ·          Optional: coconut oil (for the frying pan).
